Waldorf Chicken Salad

Recipe by Kim Ragosta, Author of "A Time To Gather" for Wild Harmony Farm

 

Ingredients

  • 1 4 to 5 lb. whole chicken
  • 1/2 tsp of salt
  • 10 grinds of black pepper
  • 1/2 lemon, juiced
  • 3/4 to 1 cup of mayonnaise (depending on your taste)
  • 1/8 cup of Dijon mustard
  • 1 tbs. of parsley
  • 1 apple, chopped
  • 1/2 cup celery, chopped
  • 3/4 cup of grapes, cut in half
  • 1/2 cup of walnuts
  • 4 oz. of cheddar cheese, cubed

 

Directions

Put chicken in crockpot and cook on high for 4-5 hrs. Take the chicken out and let it cool a bit. Pick all the chicken off the bones and shred it into a bowl.  Add all other ingredients and mix well. Chill in the fridge. Chicken salad is great alone, on greens, and as a sandwich.
