Recipe by Kim Ragosta, Author of "A Time To Gather" for Wild Harmony Farm
Ingredients

- 1 4 to 5 lb. whole chicken
- 1/2 tsp of salt
- 10 grinds of black pepper
- 1/2 lemon, juiced
- 3/4 to 1 cup of mayonnaise (depending on your taste)
- 1/8 cup of Dijon mustard
- 1 tbs. of parsley
- 1 apple, chopped
- 1/2 cup celery, chopped
- 3/4 cup of grapes, cut in half
- 1/2 cup of walnuts
- 4 oz. of cheddar cheese, cubed
Directions
Put chicken in crockpot and cook on high for 4-5 hrs. Take the chicken out and let it cool a bit. Pick all the chicken off the bones and shred it into a bowl. Add all other ingredients and mix well. Chill in the fridge. Chicken salad is great alone, on greens, and as a sandwich.
