Ben's Favorite Springtime Dinner

As the weather begins to shift from cold to hot, our bodies’ nutritional needs shift, too.  Over the winter, we crave rich foods, but as the weather warms up, we desire lighter options.  This is part of the natural cycle of the seasons, as we require extra calories to stay warm in winter.

I have a new favorite, simple recipe that I just have to share with you.  Well…it’s less a recipe, and more an idea.

During the winter, my favorite cut of meat is beef short ribs.  It’s so rich and full of flavor.  This time of year, my body wants something just slightly lighter, as it’s not quite HOT outside yet, but the cold of winter has passed.  I’ve discovered that combining one package of beef short ribs with one package of beef shanks is just exactly right for the spring season.

The shanks are leaner than the short ribs, but still teeming with

flavor and nutrients, thanks to the marrow bone in the middle of the meat.  (Shanks also happen to be one of our most economical cuts, because very few people have discovered their wonderfulness…yet.)

 So I stick one package of shanks and one package of short ribs in the crockpot on high in the morning (6-12 hours).  Sometimes I’ll add some root vegetables.  And I’ll add a cup or so of some liquid.  I usually use bone broth or red wine, or balsamic vinegar.

Salt to taste, and that’s it.  It’s ready for dinner!  Prep time is less than 10 minutes.  Delectable savoring time is way more than 10 minutes.  Very good ROI.
