Glazed Honey Lemon Country Style Ribs

Ingredients:

  • 3 lbs country style ribs, segmented into a few pieces (for ease of browning)

  • Avocado oil

  • Paste:

    • 2 tsp smoked paprika

    • 2 tsp garlic powder

    • 2 tsp salt

    • ½ tsp black pepper

    • 1 tbsp Dijon

    • 1 tbsp honey

    • 1 tbsp olive oil

    • Juice from ½ lemon

  • Braising liquid:

    • ½ cup chicken broth or water

    • 1 yellow onion, diced

    • 3 cloves garlic, roughly minced

    • 1 tbsp coconut aminos

    • Juice from ½ lemon

  • Honey Lemon Glaze:

    • 3 tbsp honey

    • 1 tbsp lemon juice

    • 1 tsp Dijon

    • Pinch of salt (~1/4 tsp) and pepper


Directions:

Preheat the oven to 300°F and line a deep baking dish with aluminum foil or choose a non-stick pan.

Place the segmented ribs into the deep baking dish.

Combine all the paste ingredients into a small bowl and whisk to combine. Place the segmented ribs into the deep baking dish, then pour the paste all over the ribs. Rub it in using your hands or a rubber brush until the ribs are completely coated. 

Heat a cast iron pan over medium heat with 2 tbsp avocado oil. Once hot, sear each segment of the ribs until a crust begins to form. This should take about 2-3 minutes per side. Once browned, place the ribs back into the deep baking dish.

While the pan is still hot, add the diced yellow onion, minced garlic cloves and juice from 1/2 lemon. Deglaze the pan, then add the water and coconut aminos. Allow the braising liquid to simmer gently for a few minutes until it starts to thicken and the onions begin to soften.

Pour the braising liquid over the ribs, then cover with aluminum foil and place into the oven for 2-2.5 hours, or until the ribs are fork tender. 

While the ribs braise, prepare the honey-lemon glaze. Combine the honey, lemon, Dijon, salt and pepper in a small bowl and whisk. Spoon the glaze over the ribs, then return to the oven uncovered to broil for 3 minutes. 

Remove from the oven and serve warm.
