Asian Pork Lettuce Cups

2lbs ground pork @wildharmonyfarm 
1/2 tsp salt
5 grinds black pepper
1 red pepper, chopped
1 red onion, chopped
2 cloves garlic, diced
2 tsp ground ginger 
2 TBS honey
2 TBS coconut aminos or soy sauce
2 TBS rice vinegar 
4 TBS p-nut butter
1/4 tsp red pepper flakes
Romaine lettuce
Chopped fresh lemongrass
Crushed peanuts (optional)
Cook pork, red pepper, red onion, garlic, salt and pepper in a cast iron skillet over medium heat until pork is cooked through (be sure to break up pork while cooking with a wooden spoon). Add sauce ingredients and cook for 3-5 more minutes until pork and sauce get married. Serve in lettuce cups. Sprinkle with lemongrass. Peanuts optional! Serve immediately!
