Serves 8
Ingredients
- 1.5 lbs uncured smoked cottage bacon ends
- 9 sweet potatoes, peeled and chopped into 1 inch pieces
- 1 TBS olive oil
- 2 tsp salt
- 20 grinds black pepper
- 1 large onion, sliced
- 1 can black beans, rinsed and drained
- 10 eggs
- 2 avocados, sliced
- Chopped cilantro
Directions Turn oven to 400 F. Mix sweet potatoes with olive oil, salt and pepper in a large bowl. Dish potatoes out evenly into 2 rimmed baking sheets. Bake for 20 minutes. Meanwhile in 2 cast iron skillets cook bacon and onions on medium heat until bacon is cooked through and lightly browned and onions are translucent. Turn stove heat off. Add potatoes to 2 cast iron skillets. Mix potatoes with bacon and onions. Add beans. Mix again. Make 10 wells in potatoes. Crack an egg into each well. Bake for about 15 minutes or until white of egg is cooked through and yolk is runny. Take skillets out of oven. Add sliced avocado and chopped cilantro to top. Serve and enjoy!
