Pork Nachos
Makes 2 sheets of nachos
Ingredients
- 2.5 lbs. organic pork shoulder from Wild Harmony Farm

1/2 tsp Paprika
- 1/2 tsp Cumin
- 1/2 tsp Salt
- 10 Grinds of black pepper
- 2 Bags of tortilla chips, divided
- 2 Tomatoes, chopped and divided
- 1 Can of black beans, drained, rinsed, and divided
- 1 Can enchilada sauce, divided
- 16 oz. Shredded cheddar cheese, divided
- Any other toppings you like
Directions
Add frozen pork shoulder roast to the crockpot and top with spices. Cook on high for 4-5 hours until fork tender—reserve for when you are ready to make nachos. Shred pork with fingers and discard bones. Turn oven to broil high. Add a bag of tortillas to a 9x13 rimmed baking sheet (can line with parchment paper to reduce cleaning)—top tortillas with cheese, pork, tomatoes, beans, and enchilada sauce. Repeat with the other baking sheet. Broil for a few minutes or until the cheese is melted and the nachos look ready to eat. Top or serve with any other toppings you enjoy.
Steak, Pepper, and Onion Fajitas
Ingredients

- 1.5 lbs Wild Harmony Farm beef sirloin steak
- 3 Green peppers, sliced
- 3 Onions, sliced
- A little avocado oil
- Salt
- Pepper
- Corn tortillas
- Shredded cheddar cheese
- Salsa and sour cream for topping
Directions
Salt and pepper both sides of the steak. Put a little avocado oil in a cast-iron skillet on medium-high heat. Add steak and sear on both sides until a nice brown crust forms. For medium rare, cook only a few minutes on each side. Transfer to a cutting board for 5 minutes before slicing. Meanwhile, cook peppers, onions, salt, and pepper in another cast iron skillet on medium heat in a bit of avocado oil. Cook until tender. In a warmed corn tortilla, add a little cheese, peppers, onions, and steak. Top with sour cream and salsa if desired.
Beef Taco Salad
Ingredients

- 2 lbs. Ground beef
- 1tsp Olive oil
- 1/2 tsp Salt
- 1tsp Cayenne pepper
- Your favorite cooked rice
- Corn
- Halved cherry tomatoes
- Chopped scallions
- Sliced radishes
- Chopped kale
- Cilantro
- Shredded cheese
- Tortilla chips
- Sour cream
- Guacamole
Directions
Cook ground beef over medium heat with olive oil, salt, and spices until cooked through. Add all ingredients to a bowl to make it look amazing! Add a mix of sour cream and guacamole to a plastic sandwich baggie and mash together to combine. Snip off the corners and drizzle over the taco bowl. Enjoy!
