Creamy Pork Ragu

A Wild Harmony Farm Recipe   

 Ingredients

Grated Carrots
1 finely diced white Onion
3 cloves of finely chopped Garlic
1 stick of finely chopped Celery
1 lb. Wild Harmony Farm Ground Pork
1 Teaspoon Fresh Thyme
1 Teaspoon Fresh rosemary
2/3 of a cup of Vegetable or chicken stock
1 ¼ cup of Light cream
2 tablespoons Parmesan cheese
Fresh ground pepper
Salt
Pasta (your choice) white, wheat or vegetable
Directions

Brown ground pork in a frying pan. Set aside when cooked.

Over medium heat add a splash of olive oil in a frying pan. Stir in chopped onions, garlic, grated carrot and finely chopped celery. Season with fresh ground pepper and a sprinkle of salt. Continue frying for 5 to 7 minutes, stirring frequently.

As soon as your onions are softened in the vegetable mixture, add in cooked ground pork and fry for an additional 5 to 6 minutes. Stirring occasionally.

In the meantime, boil water for your pasta. Always remember to add a little olive oil to keep your pasta from sticking together.

Next, pour in your stock and light cream into your frying pan with the vegetable and pork mixture. Let the mixture simmer for another 5 to 10 minutes while the pasta is cooking.

When the pasta is ready, drain it and add it to your ragu pan. Combine thoroughly. It’s ready to enjoy. Add parmesan to taste.

Serve with a nice red wine!
