Serves 5-10
Ingredients
- 1 lb sweet or hot italian sausage @wildharmonyfarm
- 1 cup chopped parsley or parsley microgreens @farmingturtles
- 3/4 tsp salt
- 10 grinds pepper
- 8 garlic cloves, chopped
- 1/4 cup olive oil
- 5 peppers (any color), cut in half, seeds and stems removed
- 2 eggs
- 1 loaf soft italian bread, broken up into 1 inch pieces with hands
- Extra olive oil
- 1/4 cup parmesan cheese
Directions
Heat oven to 400 F. Line a baking sheet with parchment paper. Add halved peppers and spray or brush with olive oil. Add a little olive oil to a skillet and cook sausage on medium heat, while breaking up with a wooden spoon, until cooked through. Reserve. In a large bowl add broken up bread crumbs, salt, pepper, garlic, eggs, olive oil, parsley and sausage. Mix together with hands. Be sure when squeezed it can stay together. If not add another egg or some more olive oil. Grab a halved pepper and hold over stuffing bowl. Stuff the pepper a bit over the top and push down to be sure stuffing stays in. Repeat until all peppers are stuffed. Put all peppers on baking sheet and sprinkle each pepper with parmesan cheese. Bake for 50 minutes or until peppers are tender. Serve immediately and enjoy!
