Pork Stew

1.5 lbs pork for stew meat, cut into smaller pieces (like the size of a nickel...I cut each piece into fourths)

1 tsp salt

20 grinds black pepper

3 sweet potatoes cut into 1 inch chunks

3 yukon gold or russet potatoes cut into 1 inch chunks

3 carrots, chopped into 1 inch chunks

2 TBS olive oil

2 onions, chopped

2 (32 oz) cartons vegetable broth

1 (28 oz) fire-roasted crushed tomatoes (plain works too)

10 oz bag frozen peas


In a large pot add olive oil with pork, potatoes, carrots, onions, salt and pepper. Cook on medium high until pork is browned and veggies aren't quite tender. Add broth, tomatoes and peas. Bring to a boil then immediately down to a simmer. Simmer until potatoes and carrots are tender. Serve!
