Rosemary Pork Tenderloin

Serves 2-4

Ingredients

  • 1 pork Tenderloin
  • 3 TBS olive oil
  • 1/2 tsp salt
  • 10 grinds pepper
  • 4 sprigs rosemary-1 of them chopped

Directions Heat oven to 375 F. In a oven proof skillet (I love all clad stainless or cast iron) add tenderloin. Rub 1 TBS olive oil, salt, pepper and chopped rosemary all over tenderloin. Let sit for 10 minutes. Add 2 TBS olive oil to skillet and turn heat to medium high. Sear on all sides until a nice brown crust is born. Add 3 rosemary sprigs to top of tenderloin. Put skillet in oven and cook for 15-20 minutes (17 is perfect for my oven) or until meat thermometer reads 130 F. Let rest 5-10 minutes before slicing on the diagonal. *please be mindful of allergies to any ingredients
