Sautéed Spinach with Chorizo and White Beans

Serves 3-4

Ingredients:

  • 5 links pork chorizo, casings removed by squeezing contents out @wildharmonyfarm
  • 1 large onion, chopped
  • 11 oz baby spinach (could sub any green...rabe would be delicious)
  • 6 cloves garlic, chopped and divided
  • 1 can white beans, drained and rinsed
  • Olive oil
  • Salt
  • Pepper
  • *parmesan cheese and red pepper flakes if desired

 

Directions

Sauté a little olive oil over medium heat in a pan with 3 chopped garlic cloves and spinach. Add a bit of salt and pepper. Once spinach is wilted take off heat. Reserve. Meanwhile sauté a bit of olive oil in another pan with chorizo, onions and 3 cloves of chopped garlic. Cook, while breaking up chorizo. Once chorizo is cooked through and onions are translucent, add white beans and stir. Take off heat. Plate spinach with chorizo on top and serve immediately. Add parmesan cheese and red pepper flakes for some more heat if desired.
