Simple Roast Beef

Prepared for Wild Harmony Farm


Eye round roast(s) from Wild Harmony Farm

Extra virgin olive oil

Kosher salt

Freshly ground black pepper



Heat oven to 450F. Add roasts to a large cast iron skillet. Drizzle beef with olive oil and sprinkle with salt and pepper. Cook in oven for 20 minutes. Turn down oven to 325F and cook until roasts are 120F (internal temp-check with meat thermometer) Let rest for about 10 minutes before slicing thin and serving. Makes for a great sandwich or alongside some roasted potatoes/your favorite starch and a vegetable or salad.

*This cut is best cooked medium-rare/rare.
