Steak, Pepper and Onion Fajitas

Ingredients

  • 1.5 lbs Wild Harmony Farm beef top sirloin steak
  • 3 green peppers, sliced
  • 3 onions (I love red), sliced
  • Little avocado oil
  • Salt
  • Pepper
  • Corn tortillas
  • Shredded cheddar cheese
  • Sour cream and salsa for topping

 

Directions

Salt and pepper both sides of the steak. Put a little avocado oil in a cast iron skillet on medium high heat. Add steak and sear on both sides until a nice brown crust forms. For medium rare cook only a few minutes on each side. Transfer to cutting board for 5 minutes before slicing. Meanwhile cook peppers, onions, salt and pepper in another cast iron skillet on medium heat in a bit of avocado oil. Cook until tender. In a warmed corn tortilla add a little cheese, peppers, onions and steak. Top with sour cream and salsa if desired. *please be mindful of allergies to any ingredients
