Waldorf Chicken Salad

1 4-5 lb whole chicken
1/2 tsp salt
10 grinds black pepper
1/2 lemon, juiced
3/4-1 cup mayo depending on your taste
1/8 cup dijon
1 TBS parsley
1 apple, chopped
1/2 cup celery, chopped
3/4 cup grapes, cut in half
1/2 cup walnuts
4 oz cheddar, cubed


Put chicken in crockpot and cook on high for 4-5 hrs. Take chicken out and let cool a bit. Pick all chicken off bones and shred into bowl. Throw bones and skin back into crockpot for later use. Add all other ingredients and mix well. Chill in fridge. Chicken salad is great alone, on greens and as a sandwich.
