Beef Round Roast

100% grass-fed beef

Farmer Ben's favorite Round Roast recipe is to preheat the oven to 325 F.  Salt and pepper both sides (lots of salt).  Stick in a roasting pan uncovered in the oven and cook until the internal temperature is 115 F.  Yes, this is pretty rare, but trust me on this.  And this only takes 20-30 minutes depending on the size of the roast.

Take it out and let it rest for 15 minutes, and then slice it as thin as humanly possible, perpendicular to the grain of the meat.  It's good warm, but it might be even better cold.
