Hanger steak or hanging tender is also known as the “butcher’s steak” (because it's so good the butcher keeps it for himself). It is known for its deep, robust, beefy flavor and is a very tender cut of beef. Because it is so tender, it is often compared to filet mignon, ribeye, or tenderloin, but with a slightly coarser texture.
It is an excellent cut to marinate and grill. It is best when cooked to medium to medium rare.
